Simplified and Divine Seafood Stew - Cioppino

Channel Golden Sun™ Seafood Mix has a variety of flavor with a firm texture. The seafood mix contains raw squid, raw octopus, cooked mussels or clams, and cooked or raw shrimp. One of the favorite recipes and quick to make is the Cioppino. In this Italian-style cioppino-inspired stew recipe, we use a Channel Golden Sun™ Seafood Mix, and canned tomatoes to keep things really easy. Add some spices and fresh herbs (if you’ve got them), with a little onion & garlic, and you’ve got a soup-er simple dinner that looks & tastes gourmet!

Ingredients: (Serves 4)

Cook time: 15 minutes
Total Time: 20 minutes.

Servings: 4

  • 1 tbsp virgin olive oil
  • 1/4 cup red onion or shallot, finely chopped
  • 1 tsp chopped garlic
  • 14.5 oz can dice tomatoes
  • 2 cups water
  • 1 tsp Italian seasoning blend
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes
  • 1 lb. Channel Golden Sun™ Seafood Mix
  • Small handful fresh basil roughly chopped
  • Salt and pepper to taste

Dish Preparation:

Step 1
In a large pot over medium-high heat, heat the olive oil and onion until the onion begins to soften (about 2 minutes).

Step 2
Add the garlic, tomatoes, spices, and water and bring to a low boil.

Step 3
Stir in the seafood, and cover for 3-5 minutes or until the shrimp are pink and the seafood is just cooked.

Step 4
Stir in the basil and season with salt & pepper to taste. The amount of salt needed will depend on the type of seafood you use, and whether your tomatoes are salted. Taste it as you go!

Step 5
Serve hot & enjoy!
